chicago has two types of pizza, the ‘deep dish’ you’re referring to, and the thin and crispy (tavern-style) cut in squares. pretty much only tourists eat the deep dish. locals usually go for the thin crust, maybe the other once a year.
fuck, I miss those thin crust Chicago tavern-style pizzas, and I’ve never even visited Chicago! I can’t seem to find any good ones withing a reasonable distance from where I live in a medium-sized city in a very major metropolitan area. It’s very frustrating.
