I think I would have a tough time with going full vegan. Vegetarian sounds like I could do it easily. I enjoy a lot of vegetarian dishes regularily and will often prefer vegetarian options over meat based dishes.
Can always start there then keep going. I will say a lot of people who ultimately go vegan also thought they never could do it. There’s some communities on lemmy with some good recipes if you want inspiration

My progress is to introduce more vegan meals, not to cut out meat fully. Lacto-ovo flexi pescatarian, or something like that.
