    Doesn’t matter much when it’s a kitchen because generally in a kitchen the fire isn’t starting in the walls. Also these old buildings are far more likely to have really janky exhaust systems just because it’s way harder to run a proper welded steel exhaust duct through existing construction. If you get a fire in a greasy nonwelded exhaust duct then it isn’t going to matter much what the building walls are made of.
